Long planks can look sharp, but yeah, they’re a bit of a pain to install - especially in tight spots. More cuts, more waste, and you’ll probably pay a bit extra for labor. As for grout, lighter shades do show grime faster, no sugarcoating it. I’ve seen people regret going too light after a year or two, especially if they skip sealing. Darker grout hides more but can make lines stand out, so it’s a tradeoff.
Soft stuff does help with echo, but don’t expect miracles. Tile’s just naturally reflective. A mat and maybe a fabric wall hanging will take the edge off, though.

About colored grout - I get the appeal for hiding dirt, but matching it to tile is such a pain. I tried a mid-grey with white tile once and it looked alright, but then I realized cleaning colored grout is its own thing… stains just blend in instead of disappearing. If you’re after low-maintenance, sometimes sticking with classic white (with a good sealer) is just less hassle overall.
Acoustic panels are another story. They’re trendy, but unless you’ve got serious echo problems or love the look, I’d skip them and put that money into better lighting or storage solutions instead.
