Running cable behind crown molding isn't too bad if you're careful. I've found the key is cutting small notches or grooves into the back side of the molding at corners, so the cable fits snug without bulging. Doorways are trickier...usually I drop down to baseboard level and run it underneath the threshold trim—less noticeable that way. Curious though, anyone tried those flat ethernet cables? Wondering if they're actually easier to hide neatly...
