Which smart-home controls keep working when the internet drops?

For a new home, I’d want essential lighting and climate controls to work even if the internet connection or a vendor’s cloud service is unavailable. But “local control” can mean different things: a device may talk directly to a hub on the home network, while voice commands, remote access, or some routines still rely on cloud services.

When comparing platforms, what’s the best way to verify which functions keep working offline, including door controls? I’m also curious how much weight to give a platform’s plan for ongoing support if its vendor eventually discontinues the service.
